Chicken parm came out good! I added a layer of fresh chopped basil and portobello mushrooms between the sauce and the cheese. Super tasty. Still prefer veal to chicken, but I’m happy with what I made. And I used minimal sauce and breading, so my blood sugar is doing great. The mushrooms helped make it even more filling, so I didn’t bother cooking the ravioli. And the one ~$4.50 package of organic chicken filled that entire casserole dish. I have like… 3 or 4 more meals, at least.
